About This Recipe

Deep-dish Pizza benefits from measured seasoning and a clear cooking method.

Prepare the ingredients before starting so the final texture stays consistent.

Ingredients

  • 3-1/2 cups all-purpose flour
  • 1/4 cup cornmeal
  • 1 package (1/4 ounce) quick-rise yeast
  • 1-1/2 teaspoons sugar
  • 1/2 teaspoon salt
  • 1 cup water
  • 1/3 cup olive oil
  • TOPPINGS
  • 6 cups shredded part-skim mozzarella cheese, divided
  • 1 can (28 ounces) diced tomatoes, well drained
  • 1 can (8 ounces) tomato sauce
  • 1 can (6 ounces) tomato paste
  • 1/4 teaspoon each garlic powder, dried oregano, dried basil and pepper
  • 1 pound bulk Italian sausage
  • 48 slices pepperoni
  • 1/2 pound sliced fresh mushrooms
  • 1/4 cup grated Parmesan cheese

Ingredient Notes

  • Protein: Use even pieces so they cook at the same speed.
  • Seasoning: Season the surface before cooking.
  • Heat control: Brown with enough heat, then finish gently if needed.
  • Resting: Rest meat briefly before slicing or serving.

Instructions

  1. 1

In a large bowl, whisk together 1-1/2 cups flour, cornmeal, quick-rise yeast, sugar and salt. In a saucepan, heat the water and oil to 120° to 130°F. Add the heated liquid to the flour mixture. Beat just until moistened. Add the remaining flour, beating to form a stiff dough.

  2. 2

Turn the dough onto a floured surface. Knead until smooth and elastic, six to eight minutes.

  3. 3

Place the dough in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 30 minutes.

  4. 4

Punch the dough down. Divide it in half. Roll each portion into an 11-inch circle. Press each dough portion into the bottom and up the sides of a greased 10-inch cast-iron or other ovenproof skillets.

  5. 5

In a large bowl, stir together the tomatoes, tomato sauce, tomato paste, salt, garlic powder, dried oregano, dried basil and pepper.

  6. 6

Sprinkle each pizza dough with 2 cups mozzarella cheese. Spoon 1-1/2 cups sauce onto each pizza. Layer pizzas evenly with the cooked sausage, pepperoni and sliced mushrooms. Sprinkle each pizza with 1 cup mozzarella and 2 tablespoons Parmesan cheese.

  7. 7

Cover the pizza, and bake at 450° for 35 minutes. Uncover. Continue baking until slightly browned, about five minutes longer.

Katy’s Kitchen Note: Use a thermometer or clear doneness cue when the center needs to stay juicy.

Katy’s Kitchen Tips

  • Preheat the oven well before baking.
  • Keep toppings balanced so the crust cooks through.
  • Bake until the cheese melts and the edges brown.
  • Rest briefly before slicing.

Variations and Substitutions

  • Herb finish: Add parsley, cilantro, basil, dill, or chives.
  • Spicier version: Increase chili, cayenne, black pepper, or hot sauce.
  • Saucy version: Serve with gravy, salsa, pan sauce, or yogurt sauce.
  • Meal prep: Use leftovers in bowls, wraps, salads, or sandwiches.

What to Serve With Deep-dish Pizza

Serve Deep-dish Pizza with potatoes, rice, pasta, salad, roasted vegetables, or bread.

Storage and Reheating

Refrigerate leftovers in an airtight container for up to 3 to 4 days.

Reheat gently so the center stays tender and the sauce does not dry out.

Common Mistakes to Avoid

  • Wet toppings: Too much moisture can soften the crust.
  • Cold oven: A low oven can make the crust heavy.
  • Too much topping: Overloaded pizza can bake unevenly.
  • Slicing too soon: A short rest keeps cheese from sliding off.
