Smash Burger

Smash Burger cooks seasoned protein until browned outside and tender in the center.
About This Recipe
Smash Burger needs good browning and a gentle finish so the center stays tender.
Let the protein rest briefly when needed so it slices or serves cleanly.
Ingredients
- ✓1 pound ground beef (preferably 80% lean)
- ✓1 teaspoon canola oil
- ✓1 teaspoon kosher salt, divided
- ✓1 teaspoon coarsely ground pepper, divided
- ✓4 hamburger buns, split
- ✓Optional: Mayonnaise, sliced American cheese, sliced tomato, dill pickle slices, lettuce, ketchup and yellow mustard
Ingredient Notes
- Protein: Choose pieces that are similar in size.
- Seasoning: Rub or sprinkle seasoning evenly on all sides.
- Browning: Use enough heat to develop color without burning.
- Resting: Rest briefly so juices settle.
Instructions
- 1
Place a 9-inch cast-iron skillet over medium heat. Meanwhile, gently shape the ground beef into four balls. Handle the meat just enough to keep the ball together. Do not compact the meat.
- 2
Increase the burner temperature to medium-high, and add the oil. Add two of the beef balls. With a heavy metal spatula, flatten each to 1/4- to 1/2-inch thickness. Sprinkle each with 1/8 teaspoon salt and 1/8 teaspoon pepper. Cook until the edges start to brown, about 1 minute and 30 seconds.
- 3
Flip the burgers, and sprinkle each with an additional 1/8 teaspoon salt and 1/8 teaspoon pepper. Cook until well browned and a thermometer inserted into each patty reads at least 160°F, about 1 minute. Repeat with the remaining beef.
- 4
Serve the smash burgers on hamburger buns with your favorite toppings, such as mayonnaise, sliced American cheese, sliced tomato, dill pickle slices, lettuce, ketchup and yellow mustard.

Storage and Reheating
Refrigerate leftovers in an airtight container for up to 3 to 4 days.
Reheat gently so the center stays tender and the sauce does not dry out.
Common Mistakes to Avoid
- Overcooking: Protein can dry out when cooked too long.
- Uneven pieces: Different sizes finish at different times.
- Skipping rest time: Resting keeps the center juicier.
- Crowding: Crowding traps steam and slows browning.
